They celebrate with 'fondas' - where people eat, drink and dance. Javier and Jason took us to the main one in O'Higgins Park. It was pretty busy - outside the metro station people had set up stalls selling drinks, empanadas, even ceviche...
Inside the park, on one side there were loads of children flying kites - it's very popular here. They're simple kites attached to cotton around a big reel.
The other side of the park was basically like a festival. Loads of stalls selling mostly BBQed food.
The skewers are called anticucho, chorizo in a bun is choripan. There were also empanadas (of course!) and churros, including fat ones filled with dulce de leche.
And we had a traditional drink called terremoto, or earthquake. It consists of a sweet wine with a scoop of alcoholic pineapple sorbet and grenadine.
There were lots of tents (think these were the actual fondas) - most of them were places where you could sit down and eat, but some of them had music. We left before it got too crowded and had our own fonda back at the apartment!
